Gert Lush is a cross between a Camembert and a Saint Marcellin. Unlike mass-produced Camemberts, which tend to have a thick rind, Gert Lush has more of a light dusting of white mould, while the interior is gooey in texture and mushroomy in flavor. Gert Lush is a West Country phrase meaning very lovely or really excellent.
